Amazingly good and uncommonly good for you Chocolate Chip Cookies

We all want to stay healthy.  I want good tasting and sometimes really decadently naughty foods.  Really, what I want is CHOCOLATE!  So for years I’ve experimented with the ingredients of the common chocolate chip cookie, you know the one on the back of the bag of chips.

I like what I came up with.  It’s a fine cookie to make every once in a while for the family.  But last week my wife asked me to make some “healthy” cookies for her to take and share at work.  The response was over whelming.  That night she told me she had a couple requests for the recipe.  Friday night she said she now had several people asking for it.

So, here it is.  Some of the ingredients are uncommon.  The result is a nice, cake like, soft, not too sweet, cookie.  High in protein and high in fiber.  I will say that not everything in these cookies can be called “healthy” but I’m more interested in the flavor and the fact that it is all real food.

1 cup whole wheat flour

1/3 cup almond flour

2/3 cups oat flour

1/6 cup TEFF flour

1/6 cup Yerba Prima Colon Care Formula (has the psyllium, oat bran etc in it already)

3 Tbsp Milk and egg protein powder

3 Tbsp 100% whey protein powder

1/2 tsp sea salt

1 tsp cinnamon

1 1/4 tsp baking soda

1/4 tsp ground cayenne pepper

1/4 lb European style cultured butter

1/4 lb regular butter

1 cup demarara sugar

1/4 cup sucanat (dried cane juice)

1/4 cup honey

2 1/2 tsp vanilla

2 large eggs

1 11.5 oz bag of chocolate chips

Preheat oven to 375.  Sift flours, salt, and baking soda together.  Beat butters, sugar, sucanat, and honey together until creamy.  Add vanilla and eggs one at a time mixing them in thoroughly.

Gradually mix the dry mixture into the creamed mixture.  Stir in the chocolate chips.  Scoop into 1 ounce balls and place on cookie sheet spaced about 2 inches apart.  Bake for 10 to 12 minutes until golden brown and delicious.  Cool completely.

These store well in a sealed container for about a week.  Do drink liberal amounts of water and milk
