Oh So Good Caramels

1 C white sugar
1 C light brown sugar
1 C turbinado sugar
1 C light corn syrup
1 C evaporated milk
1 pint heavy cream
1 cup (2 sticks) unsalted butter
2 1/2 tsp vanilla divided
Pinch of sea salt

Put all ingredients in a heavy sauce pan except for half of the vanilla. Heat to melt the sugar. Continue heating slowly while stirring constantly and adjusting the temp up and down to prevent a boil over. This will take quite some time but as you get closer to 250 degrees f. things will speed up. When the temperature reaches 250 f. turn off the burner and stir in the remaining vanilla. Pour into 2 9×9 greased pans. Allow to cool at room temperature for at least 2 hours. Turn out of the pans and cut into 3/4×1 inch pieces. Wrap individually in wax paper.
