Even cold, you’ll love my sauce…

Tonight my daughter asked for breakfast for dinner. To me that means eggs benedict. Eggs benedict means hollandaise. Even under the worst conditions, my sauce was perfect. Check it out http://wp.me/PXtZQ-2C .

It was going perfectly. Then my daughter remembered that it was forms and fee day for the new school year. Hollandaise goes into a thermos for a half hour. Then just after plating, my wife had to leave unexpectedly for about 45 minutes. Damn no way to salvage it. Dinner is either ruined or has to be eaten cold.

Much to my shocked amazement, the hollandaise was soft, velvety, silky, smooth. It didn’t curdle, break or go grainy on me. I killed it! I didn’t crush it. I didn’t hit it out of the park. No, I killed it! The sauce was killer.
